Quinoa banana bread or muffin mix

Gluten and lactose free

INGREDIENTS: 2 eggs, 1/2 cup oil, 2 ripe mash bananas, 1/2 spoon lemon juice, quinoa banana bread/muffin mix.

 

INSTRUCTIONS:

  1. Preheat oven to 180 ºC  (350 ºF). Grease and flour 8 x 6 inch pan.
  2. In a large bowl beat 2 eggs, 1/2 cup oil and 1 teaspoon lemon juice.  Add 2 ripe mash bananas.  Stir banana mix and beat for 2 minutes or until well blended.  Pour batter into prepared pan.
  3. Bake at 180 ºC (350 ºF) for 26-32 minutes or until a toothpick inserted near the center comes out clean. At 2000 meters above sea level, bake for 40 minutes.
  4. Cool completely on a wire rack before cutting and enjoying.

 

SUGGESTIONS:

  • Add finely chopped nuts or chocolate chips.
  • Half of the oil can be replaced with milk or buttermilk.
  • You may replace bananas with one cup of grated zucchini and 1/2 cup of finely chopped and drained pineapple.
  • Batter can be used for muffins (Bake for 15-22 minutes or until toothpick inserted near the center comes out clean).
